FRUIT DELIGHT

Serve 4

You will need:

  • 150 g dried apricots
  • 125 g prunes
  • 60 g raisins
  • 2 bananas, peeled and sliced; grated rind and juice of 1 lemon
  • 4 tblspn fresh orange juice

METHOD

  1. Cover the apricots and prunes with water and soak overnight.
  2. The next day, drain the fruits and stone the prunes. Place in an ovenproof dish with raisins and bananas.
  3. Stir in remaining ingredients and bake in a moderate oven (180ºC) for 20 minutes or until fruit has softened.
  4. Serve plain or with skim milk yoghurt.
