Recipes of Salads

BROWN RICE SALAD

Serves 6.

You will need

  • 2 cups cooked brown rice
  • ½ cup sliced spring onions
  • ½ cup sliced radishes
  • 1 cup whole kernel corn (unsalted) or cooked chick peas
  • ¼ cup chopped red or green capsicum
  • ½ cup chopped unsalted raw peanuts
  • 1tsp curry powder
  • Pepper

Dressing:

  • 2tblspns wine vinegar
  • ¼ cup olive or sunflower oil
  • ¼ tsp black pepper
  • 1 clove of garlic, crushed

METHOD

  1. Place rice in a large bowl.
  2. Add spring onions, radishes, corn, capsicum, peanuts and curry powder.
  3. Stir lightly to mix well.
  4. Mix the dressing ingredients together and pour over salad ingredients.
  5. Season with pepper.
