HOT RUSSIAN SALAD WITH CHEESE:

Cooking time- 20 minutes

You will need:

  • Mixed vegetables
  • Tomato juice
  • Cheese

METHOD

  1. If you have been advised to cut down on root vegetables replace these with cauliflower, onions and sprouts. (Use as large a mixture of vegetables as possible – carrots, turnips, beans, peas.)
  2. Dice and cook, season well then drain and bind with tomato juice.
  3. Pile on hot plate and cover with grated cheese.
