PASTA SALAD

Serves 6.

You will need

  • 250 gms colored pasta shells
  • 30 gms chopped green capsicum
  • 30 gms sliced spring onions
  • 1 tblspns chopped fresh oregano

Dressing:

  • 2 tblspns ricotta cheese
  • 1 tblspn vinegar
  • 3 tblspns skim milk
  • ¼ tsp pepper

METHOD

  1. Cook pasta in a large saucepan of boiling water until just tender.
  2. Drain well and mix with capsicum, spring onions and oregano.
  3. Spoon into serving bowl. Pour dressing over, toss lightly and chill.

Dressing

Mix all dressing ingredients together until smooth.
