POTATO
SALAD 
Serves 6. 
You will need 
    
      - 6 large potatoes, cooked and diced
 
      - 1½ cup natural skim milk curd
 
      - 1 tsp each dill, mustard and celery seeds
 
      - 1 cup chopped spring onions
 
      - 1 cup chopped parsley
 
      - 1-2 tblspns vinegar
 
      - 1 cup sliced radishes
 
     
METHOD 
  - Put the potatoes in a large bowl.
 
  - In another bowl mix curd, dill, mustard,
    celery seeds spring onions, parsley and the vinegar.
 
  - Pour this dressing over the potatoes.
 
  - Toss gently.
 
  - Cover and refrigerate until well chilled.
 
  - Garnish with sliced radishes.
 
  - Freshly chopped mint can be substituted for
    the dill for a different flavour.
