Salad Dressings for Slimmers

VARIATION ON BASIC DRESSINGS

TOMATO SALAD DRESSING

No cooking

  • You will need:
  • 100 gms of thick tomato puree made from good 200 gms tomatoes
  • 2 tsp yoghurt or milk
  • Pinch salt, pepper sugar
  • ½ tsp made mustard

METHOD

  1. Squeeze lemon juice or vinegar.
  2. Skin tomatoes and if very firm heat for a few minutes with little water. If soft, this is not necessary.
  3. Rub through a sieve and mix with the rest of the ingredients.

GARLIC DRESSING

No cooking

METHOD

  1. Add ½ clove or very finely chopped garlic and, if liked, a teaspoon of finely chopped parsley to any of the salad dressings.
  2. Serve with crisp chicory, celery, and with ham.

HARD-BOILED EGG MAYONNAISE

No cooking

You will need:

  • Yolks of 2 hard boiled eggs
  • 1 tblspn vinegar or lemon juice
  • Salt
  • ½ artificial sweetener tablet
  • 2 tblspns milk or thin cream
  • ¼ tsp dry mustard powder
  • Pepper

METHOD

  1. Rub the egg yolks through a sieve or pound until very smooth then add all the seasonings.
  2. Gradually beat in the cream, then the vinegar and continue beating until very smooth.
