
BEANS IN TOMATO SAUCE
Preparation time 15 minutes plus soaking time
Serves 2
- 1 cup mixed beans
- 2 cups fresh tomato puree
(½ Kg tomatoes)
- Salt and Pepper to taste
- ½ teaspoon mint/oregano/basil
METHOD
Blanch the tomatoes and prepare the puree. Soak the beans for
2-3 hours and boil till
done. Mix the boiled beans
and puree, add the
seasoning and herbs. Simmer for 5-7 minutes or
till well blended. Serve
hot.
Variation: Add Shredded cabbage, steamed beans and curry
leaves to the puree to
obtain Tomato Vegetable Broth.
