Serving Soups when Dieting

CLEAR BEET ROOT SOUP

2 servings

Cooking time – 1 hour 20 minutes.

You will need:

METHOD

  1. Cook beet root, steadily until soft, then cut into very tiny shreds. Keep a teaspoon of these for a garnish.
  2. Put the rest of the beet root into the saucepan with all other ingredients and cook for about 20 minutes.
  3. Rub through a sieve or beat well until with no pieces remain, then reheat.
  4. Pour into soup cup and garnish with the strips of beetroot.

This can be served cold or hot.
