Serving Soups when Dieting

ICED CUCUMBER SOUP

Cooking time -15 minutes

You will need:

  • 1 medium sized cucumber
  • 1 small chopped onion
  • 20 gms Butter
  • 250 ml of stock
  • 2 tblspn milk
  • Seasoning
  • Lemon

METHOD

  1. Cut the cucumber into pieces, leaving on some of the peel.
  2. Fry onion in butter, add cucumber, half the stock, seasoning and simmer gently for about 15 minutes.
  3. Put in the electric blender.
  4. Add milk and rest of the stock, when cold pour into freezing tray, leave until lightly frosted.
  5. Serve in soup cups garnished with lemon.
