Serving Soups when Dieting

QUICK VEGETABLE SOUP

Cooking time – 10 minutes

You will need: Approx.

  • 450 g mixed vegetables
  • Chopped parsley
  • 750 ml stock or water
  • Grated cheese
  • Seasoning
  • *Do not choose a good mixture of vegetable for an interesting flavor. Use no potatoes and not many carrots in this.

METHOD

  1. Peel and grate the vegetables on a coarse grater.
  2. Bring the stock or water to boil, add the vegetables and seasoning and cook rapidly for about for about 5-8 minutes until the vegetables are just tender.
  3. Pour into hot soup cups and sprinkle with lots of grated cheese and parsley
