Serving Soups when Dieting

VEGETABLE SOUP

2 Servings

Cooking time – 15–20 minutes

You will need:

  • 300 gms. Diced vegetables (carrots, tomato, turnip, onion, leek, and/or celery, but not potatoes or parsnips)
  • 575 ml of VERY CLEAR meat stock with all fat removed or vegetable stock
  • Parsley
  • Seasoning

METHOD

  1. Prepare and dice vegetables
  2. Simmer in stock for about 15 minutes
  3. Season well and garnish with chopped parsley.
  4. This non-thickened soup has an excellent flavour and helps to avoid the feeling of ‘being hungry’
