HINTS FOR COOKING WITHOUT
SALT
The use of herbs, spices and other
flavorings can improve the flavor of foods cooked without salt. Dishes prepared with such
flavorings are tasty and attractive and can stimulate the appetite.
Eggs: Seasonings such as green
peppers, parsley, onion, pepper, curry powder give delicious flavor.
Soups: Use salt free recipes for
homemade stock. Any vegetables, barley, rice or pasta may be added. Soups are better if a
portion of the cooked soup with the vegetable is pureed in the blender than added back to
the soup. To give a lift, try adding some chilli/ pepper powder. The flavor of any soup
improves on the second day after it has been stored in the fridge.
Fish: May be grilled, steamed or
baked in the oven in aluminum foil. Tomato, onion, mushrooms and herbs may be added and
sealed in with fish while baking. Lemon juice, vinegar, curry powder, mushrooms, onion,
parsley, bay leaves and other herbs all add interest to fish.
Meat and Poultry: Any meat to be
grilled can be marinated beforehand to enhance the flavor and at the same time to
tenderize the meat. Marinade mixtures can be made using lemon juice, vinegar, unsalted
French dressing or fruit juice with the addition of garlic, mustard, onion, herbs, spices
or crushed nuts. The mixture may be used to baste the meat or poultry as it cooks.
Meats should be dry roasted without any
added fat.
